
Este mes el ingrediente elegido para nuestro Cross Continental Cooking project fue el cava... y gracias a este proyecto conjunto que tengo con Tricia de Eating is Art voy a poder preparar mi propia cerveza de jengibre, simplemente mezclando sirope de jengibre con agua con gas... De los sueños gastronómicos infantiles ya solo me queda pendiente la pelea a besugazos (o pangazos, según como esté la economía :P) No dejéis de visitar la receta de Tricia: sangría de cava que, como todas las anteriores, está traducida al español. Además Tricia se ha embarcado en un nuevo proyecto: su propio estudio fotográfico Studio Tricia Martin. No dejéis de visitarlo, os dejará sin palabras... En cuanto a mi receta, tenéis que probarla, de verdad, y no volveréis a comprar uno de esos "blocs de foie" con ingredientes dudosos por los que te piden un riñón.

Now thanks to this Cross Continental Cooking project with Tricia Martin from Eating is Art, I will be able to prepare my own ginger ale... isn't it great? Please do not fail to visit her ginger sangria recipe. 175 ml cava 200 gr clean chicken livers 150 gr chicken breast 1 laurel leaf r250 gr butter 2 pepper grains 1 pinch of salt For the decorative jelly: 125 ml cava 125 ml water 10 gr neutral gelatine carrot shaped as a flowerchives
Preparation: Let's start preparing the jelly. Put water in a saucepan, bring to boil, and add gelatine, stirring until totally dissolved. Add cava, and mix well. Take a tablespoon of liquid gelatine, and pour it in the each of the molds. Place carrot flowers and chives at the bottom of the mold. Let it cool in refrigerator, so that decoration will stay in place. Take out of the fridge, and add some more gelatine. This gelatine layer will help prevent the pate from oxidating. Take back to the fridge again, until completely set, while you go on preparing the pate.
In a steamer pot put 150 ml cava, laurel leaf, and pepper grains, and bring to soft boil. Add chicken livers and breast with a tight-fitting lid and steam over low heat for 15 or 20 minutes. Reserve chicken livers, breast, and pepper grains.
Using an electric mixer, blend well butter, chicken livers and breast, pepper grains, 25 ml cava, and salt to taste. Pour this mixture over gelatine, and let it cool inside the fridge for at least 4 hours.
To unmold the pate, run the tip of a knife around the edge of the mold. Invert the mold onto a serving plate. Dampen kitchen towels in hot water, wring out, and apply to outside of mold for 30-60 seconds
Pate can be frozen, just take it out of the freezer one hour before it is going to be served.
