Grilled grapefruit with mascarpone

I am doing a cooking course at a culinary school, and one of our first activities was to create different desserts which involved grilling fruit. Fruit is perfect for the grill because it is so easy to prepare and the heat of the grill whether, induction, electric, gas or charcoal, will add fantastic flavor to any fruit. The natural sugars in the fruit will caramelize over the fire, concentrating the flavors by reducing the water. The process is also very simple: you will need sliced fruit, and some melted butter to prepare the most basic grilled fruit. Hard fruits like apples, and pineapples are the easiest to grill since they hold their shape and texture while cooking. Softer fruits like peaches, or plums will become too soft if overcooked. You will need to be more attentive of this kind of fruit,and if you are preparing them on a charcoal grill, I suggest you using aluminim foil to keep the fruits from falling through the grilling racks.

With many fruits you can simply cut them in half and, with most fruits you can leave the peels on. This helps hold them together whether you eat the skin or not. It is best to grill fruit over medium heat on a very clean cooking grate. To keep the fruit from sticking to the grill, lightly brush them with melted butter. You can also try marinating the fruits in a combination of your favorite spices and your favorite alcohols. A mixture of rum, brown sugar, cinnamon, honey, vanilla,… Let your imagination run wild and you’ll find what a great addition grilled fruits can be!!!

{Grilled grapefruit with mascarmpone}

Preparation time: 5 min

Cooking time: 10 min

Serves: 4

Ingredients

  • 2 grapefruits
  • 150 g mascarpone
  • 2 tbs confectioners’ sugar
  • melted butter
  • brown sugar
  • Directions

    1. Preheat grill pan (or grill rack) to medium high
    2. Cut grapefruits in half, and brush them with melted butter. Sprinkle
      some brown sugar on top of the halved grapefruits. Brush the grill pan with melted buter as well
    3. Cook, flesh side down, about 5 minutes, until it is hot and the sugar caramelised
    4. Serve with a dollop of mascarpone cheese mixed with confectioner’s sugar

{Grilled strawberries with cake}

Preparation time: 10 min

Cooking time: 10 min

Serves: 4

Ingredients

  • 250 g strawberries, washed
  • 4 yogurt cake slices
  • 4 tbs crème fraîche (o whipped cream)
  • melted butter
  • Directions

    1. Preheat grill pan (or grill rack) to medium high
    2. Brush the grill pan with melted butter
    3. Cook the strawberries, turning halfway trough cooking (2-4 minutes)
    4. Brush again the grilling pan with melted butter, and cook the cake slices, turning them halfway through cooking (about 2-4 minutes)
    5. Serve grilled strawberries with a slice of grilled cake and a dollop of crème fraîche (or whipped cream)

{Quick apple pies}

Preparation time: 20 min

Cooking time: 10 min

Serves: 4

Ingredients

  • 1 apple
  • 4 circles of pie dough
  • melted butter
  • brown sugar
  • 4 dollops vanilla icecream
  • 4 tbs caramel sauce
  • Directions

    1. Preheat grill pan (or grill rack) to medium high
    2. Brush the grill pan with melted butter
    3. Peel and core apple, core, and then using a mandolin slice it very thinly. Distribute apple slices on the pie dough, pressing slightly. Brush the mini pies with melted butter, and sprinkle some brown sugar on top.
    4. Place carefully the apple mini pies on the grilling pan, apple side down, and cook for 3 minutes, until apple is tender and caramelised. Turn the mini pies carefully, and cook about 3 minutes more, until pie dough is crusty.
    5. Serve the hot mini pies with a dollop of vanilla icecream on top, and some caramel sauce
