These are the cookies that I prepared my son Jorge for his third birthday (you can see a pic here). I did not have much time to prepare something more elaborate, and I needed a quick and easy recipe for him to bring to school on that special day. They were a huge success, so I decided to repeat them and share them with you. This time, the cookies have been prepared by my children: Pablo and Jorge. To make the recipe easier for them, we skipped the first steps, and just put all the ingredients in a bowl, and they mixed them using their little hands. (Messy, but funny!) This way the cookies surface turned out a litte more cracked and uneven, but they are just as delicious!
{M & M’s Cookies}

Yield: 25-30 cookies
Ingredients
- 100 g brown sugar (1/2 cup)
- 100 g white sugar (1/2 cup)
- 1 tsp vanilla extract
- 175 g butter, room temperature (3/4 cup)
- 1 egg and 1 egg yolk
- 300 g flour (2 and 1/2 cup)
- pinch of salt
- 1 tsp baking soda
- about 200 g (1 cup) M&M (or similar chocolate candy)
Directions
- Preheat oven to 180 º C (350 º F), and cover three baking sheets with paper parchment
- In a large bowl, whisk together the flour, baking soda, and salt beat the butter and sugars until light and fluffy. Add the egg and egg yolk, beating until well combined. The add in the vanilla extract, and mix.
- Add the flour, salt and baking soda to the creamed mixture and using a spatula mix just until incorporated
- Divide batter into 25-30 portions, and using your hands shape every portion into a ball. Place them on the prepared baking sheets, quite separated since they will spread in the oven.
- Using the palm of your hand, flatten each ball into a patty
- Cover cookie with M & M’s. Gently press the candies into the dough
- Bake for 10-15 minutes, until they are golden brown on the edges. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool
NOTES:

- I always use a double baking sheet (putting two baking sheets together) when preparing cookies, I find this way they bake more uniformly
- They can be kept in an airtight container for up to a week
