{Cookies with chocolate leaves}

Preparation time: 45 min

Cooking time: 15 min

Yield: 48 cookies aprox

    Cookie dough:

  • 400 g flour
  • 125 g sugar
  • 200 g butter, cold and diced
  • 1 egg
  • 1 pinch of salt
  • Chocolate leaves:

  • 200 g dark chocolate
  • fresh rose leaves

  1. Start preparing the cookies. In a medium mixing-bowl, mix together all ingredientes to form a ball.
  2. Divide the dough in two or three, and gather each portion into a slightly flattened ball.
  3. Working with one ball of dough at a time, roll it out between two baking papers to a thickness of maximum 0,3 cm. Freeze for 30 minutes, or place on the refrigerator for a couple of hours.
  4. Use a round cookie cutter (or a glass) to cut out cookies, and transfer them on a prepared baking sheet. Freeze for another 15 minutes.
  5. Preheat oven to 350ºF and slip cookies into the oven to bake for 10-15 minutes, until just slightly browned at the edges. Transfer on a rack to cool completely, and keep in a tin box in a dry place
  6. Now we are going to prepare the chocolate leaves. Melt chocolate in a double boiler, or in the microwave
  7. Use a small new paint brush or makeup brush to ‘paint’ the under side of the leaf. Try not to get any melted chocolate on the top of the leaf, just paint the bottom in a thick, even layer.
  8. Lay the leaves on parchment paper and refrigerate for about 60 minutes to harden. When ready, gently and slowly peel the leaves off the chocolate and lay the chocolate leaf down.
  9. Use some melted chocolte (it should be cold) attach the leaves to the cookies, and place in the fridge again until set

  • Store up to a week inside an airtight container on a cold place. Idea from book “El libro de oro del chocolate”
