{Chocolate potato cake}

  • 1/2 cup unsweetened cocoa powder
  • 2 cups flour
  • 2 1/2 t. baking powder
  • 1/2 cup butter
  • 3/4 cup sugar
  • 3 large eggs
  • 1 cup mashed potatoes
  • 1/2 cup milk
  • Chocolate frosting, recipe here


  1. Preheat oven to 350ºF.
  2. Butter and flour a 10 inch tube pan.
  3. Mix flour, cocoa, baking powder and salt in medium bowl.
  4. Beat butter and sugar in large bowl with mixer at high speed until fluffy.
  5. Add eggs, one at a time, beating until just blended after each addition.
  6. With mixer at low speed, gradually beat in potato, followed by the dry ingredients, alternating with the milk.
  7. Spoon batter into prepared pan.
  8. Bake until a toothpick inserted into the center comes out clean, about 30 minutes.
  9. Cool cake in pan. Turn out onto a rack to cool completely.
  10. Spread top and sides of cake with frosting.


  • If you find crunchy surprises in the cake, please remember to add the eggs without the shells for a next time
