{Chocolate potato cake}

Ingredients
- 1/2 cup unsweetened cocoa powder
- 2 cups flour
- 2 1/2 t. baking powder
- 1/2 cup butter
- 3/4 cup sugar
- 3 large eggs
- 1 cup mashed potatoes
- 1/2 cup milk
- Chocolate frosting, recipe here
Directions
- Preheat oven to 350ºF.
- Butter and flour a 10 inch tube pan.
- Mix flour, cocoa, baking powder and salt in medium bowl.
- Beat butter and sugar in large bowl with mixer at high speed until fluffy.
- Add eggs, one at a time, beating until just blended after each addition.
- With mixer at low speed, gradually beat in potato, followed by the dry ingredients, alternating with the milk.
- Spoon batter into prepared pan.
- Bake until a toothpick inserted into the center comes out clean, about 30 minutes.
- Cool cake in pan. Turn out onto a rack to cool completely.
- Spread top and sides of cake with frosting.
NOTES:
- If you find crunchy surprises in the cake, please remember to add the eggs without the shells for a next time
