Sopa de pescado / Fish soup

After so may sweet and chocolate dishes, today I wanted to share with you a light and tasty recipe … a fish soup. This fish soup recipe is a quite simple and fairly quick dinner idea, your kids will love it if you allow them to fish the fish crackers (with the spoon!). Be warned some grownups will want to fish the crackers too. If you want to make the recipe really light, you can avoid or reduce the flour and butter, the roux is only intended to thicken the soup.

Sopa de pescado / Fish soup

Ingredients:

  • 2 tbs butter
  • 2 tbs flour
  • 4 cups (1 l) fish stock
  • salt and pepper to taste
  • fish crackers

Directions:

  1. In a large stockpot over medium heat, melt 2 tbs butter and then add flour, stirring quickly to make a roux (this will be the base of your soup).
  2. Pour the fish stock into the roux slowly, stirring constantly until smooth
  3. Let the soup simmer for 20-30 minutes
  4. Serve with fish crackers, and let the children have fun fishing them!
